The 270-324 mfd start capacitors is the most common size used in 3hp to 10hp phase converters.
One capacitor will start most 3hp or 5hp three phase motors.
Two capacitors will start most 7.5np three phase motors.
Three capacitors will start most 10hp motors.
Adding
run capacitors
to balance the voltages or adding
one extra start capacitor
will insure you will not have a starting problem.

This is because the starting requirement varies with the motor, input voltage and the load on the motor.
When you build your converter please allow room to add a capacitor if needed.
